Lunch 5 Ways – Quick, Easy & Vegan

What’s for lunch? A few weeks ago, I have asked you what you want to read on my blog in future posts. The result was: recipes! So here we go. I thought I could start with 5 simple lunch ideas with which I am obsessed at the moment. They are all super easy to make, healthy and vegan.

When it comes to lunch, I always go for something super easy and quick. After coming home from University, I am always super hungry and therefore don’t want to prepare food that takes more than 20min to make. In addition, I mainly just throw some leftovers together and it always turns out to taste perfect. I like simple food without too much flavors and different ingredients.

Buddha Plate

This lunch idea just took me 5min to make. What you need is 1can of chickpeas (make sure to rinse them thoroughly before eating them), soy beans, cucumber and tempeh. This one was flavored with maple – so good! Just roast the tempeh in a pan until golden. In a final step, I just added some Falafel Seasoning on top of the cucumber. For variations you can easily replace the chickpeas with Kidney Beans, White Beans or Black Beans – whatever you have left!

Burrito Bowl

Here you can see one of my all-time-favorite combinations for a quick lunch. It simply contains all ingredients of a Burrito – that’s why I named it Burrito Bowl. Just boil some basmati rise, rinse a can of black beans and corn, cut up some tomatoes and smash half of an avocado. I seasoned everything with pepper and chili. I like it spicy!

Vegan Chili

This bowl of vegan chili is super high in protein! You need: 1 can Kidney Beans, 1 small can corn, soy meat, tomato sauce, chilli powder or chilli flakes (I used 1 tsp chili powder and sprinkled some chili flakes on top) and fresh basil. Just rinse the corn and the beans and heat all ingredients up for 5min. Enjoy!

Tahini-Rice-Bowl

My latest addiction besides Siracha: Tahini! The combination of Avocado and Tahini is just perfect. This bowl contains basmati rice, black beans, half of an avocado, salad, cucumber and cherry tomatoes. As dressing I just used one tablespoon of Tahini and finished it with some chili flakes.

Colourful Plate

This lunch plate is not only colorful but also soo simple and super easy to prepare. You just need to cook some butternut squash in boiling water for 5min, rinse a can of chickpeas, cut the cucumber and avocado in slices and roast some tofu in a pan. My tofu had an oriental flavoring and was so good! Just put everything on a plate and put some Siracha on top. I’m seriously addicted to Siracha at the moment – I put it on everything!
